Would it be wise to make my second ever pair of Iron Hearts the 25oz or should do another 21 or 14oz pair. Looking for some opinions.

Personal preference really, although I think everyone should try it.
The 14oz is entry level now. I don’t really do 14oz because a few years back it was 21oz that was entry level. By the time the 14oz arrived I knew I enjoyed the heavy stuff and I saw no reason to go lightweight.
For me, the 25oz is a specialist denim. Denimhead denim. The weight and hand of the fabric is unique and initially seems extreme. The first couple of weeks of wear are interesting as you are very aware of them. But they soften and form around you and instead of feeling like they are wearing you, eventually you end up wearing them.
It is stuffed with very dark indigo giving high contrast fades. There is some wonderful texture to the denim, giving a hint of slub and some very cool vertical fading over time.
While 21oz is rightly the flagship denim, the 25oz is the hidden knowledge.

@neph93 Thanks for the info. Accounting for shrinkage, it looks like I'd be between tag 38 and 40. The 777 measurements look better though. Is it pretty much one inch shrinkage?
-
One inch shrinkage is the maximum. There are lots of variables (size, amount of agitation in the soak, water temp, length of soak etc), but I have had three pairs of XHS and never had the full inch.
A good rule of thumb with XHS is to order the size with measurements around what you would like when the jeans are broken in. You will loose up to an inch with the shrink but regain around an inch with the stretching that occurs with wear.
